Oneko by Etxegana is a restaurant where culinary excellence meets creativity. Its chef May Noskhare fuses traditional techniques with contemporary innovations. Since joining the restaurant, May Noskhare has gained recognition for her ability to reinterpret classic Basque dishes with an avant-garde twist, leading Oneko by Etxegana to become a leading culinary destination. His passion for cooking and commitment to quality are evident in every dish he creates, making him a leading figure in today’s dining scene.

May Noskhare has been passionate about Basque cuisine since she arrived in Spain. He has honed his craft over the years, working at Martin Berasategui’s Eneko Atxa restaurant and Mina Alvaro Garrido restaurant, before joining the team at Oneko by Etxegana restaurant.

Chef May brings a unique perspective to the kitchen, combining traditional techniques with fresh, seasonal ingredients to create dishes that surprise and delight diners. His attention to detail and commitment to excellence are reflected in every dish that comes out of his kitchen. Additionally, May Noskhare is also an inspiration to other women who aspire to succeed in the food industry.
